Watermelon Blueberry Feta Mint Salad
When I found this recipe it was interesting to me for many reasons, first of all it is beautiful! Second, the flavors are so complex yet compliment each other well. The sweet and savory combination is just complicated enough to make your tastebuds go a little crazy without being so over the top that the flavors start to disconnect. So shake things up at your next barbecue and see how much everyone will appreciate something just a little different.
Watermelon Blueberry Feta Mint Salad (Print Me)
Ingredients:
4 Tablespoons olive oil
2 Tablespoons balsamic vinegar
1/2 teaspoon salt
1/2 teaspoon ground black pepper
8 cups diced watermelon
2 cups fresh blueberries
1/4 cup rough chopped fresh mint leaves
1/2 cup crumbled feta cheese
Directions:
In a large bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
Add the diced watermelon, blueberries, mint and feta cheese to bowl. Gently toss to coat.
