Where did the summer go? And how did it slip by sooo quickly? This summer was an especially crazy one for me, it felt like I could see the weeks flying by, but unfortunately there was nothing I could do about it but try and enjoy the ride! I’ve got to be honest and say not a ton was coming out of my kitchen this summer, and when it was, it was often super easy things like this Artichoke & Roasted Red Pepper Pizza, but hey.. what’s that thing they say about brilliance in the basics? Well it holds true here.
This is one of those things I throw together when I need something quick and easy, and every time I make it for a friend they ask if it’s on my blog, to which I always laugh and say something like “no, it’s only like 5 ingredients, it’s not a recipe”. But, then I remembered I’m not the only one around here that needs an arsenal of quick, tried and true delicious meal ideas, so maybe it would be worth the share!
I call this a recipe loosely, because I never measure any of the ingredients, so go with how you like yours but this will give you a rough idea of how I make mine.. it’s pizza, not rocket science after all. I use a pre-made gluten free crust, but whatever your favorite crust is will be perfect, I am also thinking this would probably be great on a cauliflower crust if you want to make things a little healthier. However you do it, I’m sure you’re gonna love it!

Ingredients
- Prepared pizza crust (I use gluten free, of course)
- Jar marinated artichoke hearts
- Jar roasted red peppers
- ~ 2 Tbsp garlic olive oil (or regular olive oil/avocado oil)
- ~ 2 cups shredded cheese (like Trader Joe’ Quattro Formaggio)
Instructions
- Preheat oven to 350ºF or according to your pizza crust’s instructions.
- Drizzle garlic olive oil over pizza crust and brush to lightly and evenly coat crust.
- Chop artichokes hearts and roasted red peppers (I do not use the whole jar of either), top crust with chopped veggies then sprinkle with shredded cheese.
- Place in preheated oven and cook until cheese is melted and golden brown, ~15 minutes.
- When ready, remove from oven and allow to cool for a few minutes before slicing. Enjoy!
