Coconut Rice
Ingredients
2 cups jasmine rice
1 1/2 cups water
1 cup canned, unsweetened coconut milk
1 Tablespoon brown or coconut sugar
Salt to taste
Instructions
Rinse and drain rice.
In a medium saucepan over high heat, add all ingredients, stir, and bring to boil.
When rice begins to boil reduce heat to low simmer and cover with lid.
Simmer for 15 minutes before removing pot from heat and allowing to sit for ~10 minutes. Fluff with fork and serve immediately.
