Sometimes, meal time can get a little redundant. Life has a way of getting busy and at times all you can manage is getting something easy in your belly. For these days, it’s great to have a few ideas up your sleeve to put a little spin on your old standbys, and that’s exactly what this Coconut Rice does.
The addition of coconut milk and a bit of brown sugar gives a little something special to your rice, making it a great addition to all your favorite meals (think anything Asian or even something spicy like barbacoa) and it only requires the additional effort of opening a can. Best of all, it reheats beautifully which is great for people like me who love leftovers.

Ingredients
- 2 cups jasmine rice
- 1 1/2 cups water
- 1 cup canned, unsweetened coconut milk
- 1 Tablespoon brown or coconut sugar
- Salt to taste
Instructions
- Rinse and drain rice.
- In a medium saucepan over high heat, add all ingredients, stir, and bring to boil.
- When rice begins to boil reduce heat to low simmer and cover with lid.
- Simmer for 15 minutes before removing pot from heat and allowing to sit for ~10 minutes. Fluff with fork and serve immediately.
