Cranberry Orange White Chocolate Chip Cookies {Gluten Free Option}
Perfect for the holidays but easy enough for any day, these Cranberry Orange White Chocolate Chip Cookies will leave you wanting for nothing.
Ingredients
Cookies:
1 cup sugar
1/2 cup brown sugar
1 cup butter, softened
1 Tablespoon grated orange peel
2 Tablespoons orange juice
1 egg
2 1/2 cups all purpose flour (gluten free option here, I used Better Batter)
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups fresh cranberries, coarsely chopped then measured
1 cup white chocolate chips
Glaze:
1 cup powdered sugar
1 teaspoon grated orange peel
~2 Tablespoons orange juice
Instructions
Preheat your oven to 350ºF.
In a medium bowl mix flour, baking soda and salt to combine then set aside.
In a the bowl of your stand mixer or a large bowl with an electric mixer beat sugars and butter until light and fluffy (~2 minutes). Add orange peel and orange juice beating until combined. Next, add egg, again beating until combined. Add flour mixture beating on low until just incorporated. Fold in cranberries and white chocolate chips.
Drop cookie dough by the rounded spoonful (I did ~1.5 oz cookies for the perfectionists out there), spacing 2 inches apart.
Bake in preheated oven until bottoms and edges start to turn golden brown (~12-14 minutes). Remove to cooling rack and allow to sit on cookie sheet for several minutes before removing to cool completely.
When cookies are cooled, combine glaze ingredients and drizzle over top of cookies.
