I’m no gonna lie ya’ll, giving up cheese has been hard! I’m also not gonna lie in saying I’ve definitely had some cheat meals on this vegan adventure, of which I think all involved cheese, but for the most part I’ve been pretty strict with myself. For me, vegan cooking has involved A LOT of curry recipes, and while I love curry it gets a little redundant after a while so new meals are a nice reprieve. While searching for a curry alternative I ran across this recipe for Vegan Nacho Cheese and to say I was skeptical was an understatement, how are we turning potatoes and carrots into nacho cheese people? Well, it’s a thing. And I dig it.
I was also initially thinking this recipe was going to take too long or have too many weird ingredients to be worth it, but on top of being ridiculously easy and fast, it is also ridiculously deliciously cheesy, and the texture is great!
