Quick, delicious side dishes that have interesting flavor and don’t bust your calorie goals can be hard to find. Not only that, but it’s so easy to get stuck in a side dish rut and end up making the same things week in and week out, which can lead to getting bored with your food and starting to eat junk (guilty!). I love this copy cat Chipotle rice because it’s flavorful on it’s own and it adds tons of complexity to other dishes, plus it’s been lightened up with less oil so you don’t have to feel like you’re adding tons of calories for some flavor. On top of that it’s super easy to make and that is always a plus! So it’s a win-win-win-win! Hope you’re New Year is starting off fantastic!

Cilantro Lime Rice {Chipotle Copycat}   (Print Me)

Ingredients:
1 cup long grain or basmati rice
1/2 lime, juiced
2 cups water
1 teaspoon salt
3 Tablespoons cilantro
3 teaspoons oil (coconut, olive etc.)

Directions:
In a small heavy pot, add rice, water, 1 tsp oil and salt. Boil on high until most of the water evaporates. When the water just skims the top of the rice, reduce to low and cover about 15 minutes. Shut off flame and keep covered an additional 5 minute.

In a medium bowl, combine chopped cilantro, lime juice, rice and remaining oil and toss until completely mixed.
