I’m always looking for a snack that seems like it’s naughty, but is actually good for me. Especially since going back to school full time and continuing to work, my need for snacks that will keep my energy up and that are portable are in high demand. I like to change things up so I don’t get sick of what I have and end up eating something that I’ll just later regret. I pinned these forever ago, and finally decided to make them recently; I’m so happy with the results, they were effortless, yummy, and I didn’t have to feel bad about eating them. The best part is they have a sweet, crunchy, slightly salty flavor that most of us look for in snack and chickpeas are great for you! Hope you enjoy these!
Honey Roasted Chickpeas (Print Me)
Ingredients:
1 (15 ounce) can garbanzo beans
1/2 teaspoon ground cinnamon
2 teaspoons olive oil
1/4 cup mild honey
1/4 teaspoon coarse sea salt, optional
Directions:
Preheat your oven to 350° F. Lightly spray a 1-quart shallow baking dish with non-stick spray or use a well seasoned cast iron skillet. Rinse the beans until no longer foamy (foam = sodium) and water runs clear. In a small bowl, combine all the ingredients except salt and mix well.
Place in the prepared dish and bake, uncovered, until toasted and darkened in color, about 45 to 60 minutes, stirring once after 30 minutes. Remove from oven, stir, and sprinkle with salt, if desired. Serve warm or at room temperature (will get crunchier as they cool).

Could you use dry beans that have been cooked? I have a bag of dry chickpeas sitting in my cabinet looking for some way to be used!

yes, you would want to cook them fully according to package directions 🙂
If you use dried bag peas, then soak them overnight you don't need cook them Frst…
