Guess what? This is my 100th post! I am pretty excited about this because SBC has meant so much to me over the past year and a half! What better way to celebrate then with a giveaway!! When I was trying to figure out what I should gift, it didn’t take long. This is my FAVORITE cookbook, by one of my most trusted recipe sources, and I have talked about it a TON! Of course, I am talking about ATK’s Healthy Family Cookbook! And to celebrate, here is another fabulous recipe adapted from ATK. These waffles are great plain, but adding some fresh cherries and chocolate just take them over the top! Scroll down for a chance to win, good luck and enjoy!
Dark Chocolate Cherry Waffles (Print Me)
Yield: 3 cups batter
Ingredients:
1 cup all-purpose flour
1 cup whole-wheat/white-wheat flour
2 Tbsp yellow cornmeal
1 tsp salt
1/2 tsp baking soda
2 large eggs, separated 4 Tbsp unsalted butter, melted
1 3/4 cups buttermilk
3 Tbsp maple syrup
Pinch cream of tartar
1 cup fresh cherries, pitted and roughly chopped
~3/4 cup dark chocolate chips
Directions:
Preheat waffle iron according to manufacture’s instructions. Whisk flours, cornmeal, salt, and baking soda together in a large bowl and set aside.
In a medium bowl whisk together egg yolks and melted butter, then whisk in buttermilk and maple syrup.
In a large bowl or stand mixer, whip the egg whites and cream of tartar on medium-low until foamy (about 1 minute). Increase speed to medium-high and whip until stiff peaks form (3-7 minutes). Make a well in the middle of the dry ingredients, pour in the buttermilk mixture and whisk gently until incorporated but a few lumps remainGently fold in egg whites with a rubber spatula. When egg whites are almost combined, add cherries and chocolate and fold in a few more times.
Cook batter according to your waffle iron’s instructions. Remove and keep warm in preheated oven if desired. Serve immediately. Leftovers can be cooled and frozen.

I have seen this book at the bookstore and I always leaf through it. It has so many wonderful recipes. I know I would love to just read the book like I would a novel and see what wonderful creations I could make.
