I started back to school this week. I can’t say I am the *most* excited to be back in school AGAIN, I really just want to be done and start my big girl job! But, understandably, I have to put in the work and actually FINISH a degree (funny how that whole finish part works). Hopefully a couple more years of my nose to the grindstone and I’ll be on that track. So, needless to say between work, school and the regular day to day it’s been a crazy week. However, I did pause for a minute to make this amazing guacamole from Confections of a Foodie Bride (I just LOVE her blog). I enjoyed it with some chicken taquitos I had in the freezer and it made an outstanding and quick dinner! Guacamole lovers be prepared, this stuff is addicting!
Grilled Pineapple Guacamole (Print Me)
Ingredients:
2 large ripe avocados
Juice of 1 lime
Salt
Dash cumin
1/3 cup finely diced red onion
Small handful of cilantro, chopped
Jalapeno pepper, seeds removed and finely diced
2 pineapple rings sliced 1/2-inch thick & core removed
Olive oil or cooking spray
Directions:
Preheat grill or large pan on stove top to high. Using the non-stick spray or olive oil lightly coat both sides of the pineapple rings. Grill pineapple for about 4 minutes on each side, until nicely browned. Remove from the grill and set aside to cool to room temperature before cutting into small cubes.
Remove the pit from the avocado and scoop from its shell. Add the lime juice, salt and cumin lightly smashing with a fork. Stir in the onion, cilantro, peppers, and pineapple cubes.
Serve with tortilla chips or use as topping on tacos or burgers.
