I don’t know how much I have really talked about my family here, but I am insanely close to them. Since moving to the East Coast from the Midwest I don’t get to see them nearly as much as I would like, but I can always feel close to my mom by simply stepping into my kitchen. Growing up I was always in the kitchen with my Mother or my Grandmother, even as a child I loved to cook. My mom is an incredibly beautiful woman, inside and out, and no matter how much she had on her plate, we always had a hot home cooked meal on ours. This is one of those classic recipes that takes me right back to childhood; while I made a few adjustment to it from the way she passed it down to me, it tastes just like Mom’s. Thanks for everything Mom, especially my stellar cooking skills.
Ham Stroganoff (Print Me)
Ingredients:
1 Package Egg Noodles
1/4 cup butter
1 cup chopped yellow onion
3 cloves minced garlic
16 oz fresh mushrooms, sliced
2 lbs cooked ham, diced (like this not like lunch meat.. or spam)
3 cups chicken stock
1 can tomato sauce (8 oz)
1 can tomato paste (6 oz)
1/2 cup red wine
2 Tbsp flour
2 cups sour cream
Salt & Pepper
Parmesan cheese
Directions:
Melt the butter in a large saucepan over medium heat. Add the onion and garlic and cook until fragrant (about 1 minute). Add the mushrooms and ham and cook for about 5 minutes. Add chicken stock, tomato sauce and paste, wine, and flour. Simmer for about 10 minutes. Meanwhile, cook egg noodles following directions on the package. Add cooked noodles, sour cream, and salt & pepper to taste, let it simmer for about 30 minutes or until sauce has thickened. Serve with Parmesan cheese on top.
