I really think it is important to find ways to make the foods you love healthier, so you can maintain a healthy lifestyle and not ruin your hard work by indulging now and then. This being said I love burgers and fries, always have always will. But, instead of frying then in a vat of hot fat, I bake them making them much more figure friendly. Now, I’m not saying these are the healthiest choice and you should eat them everyday, but they are a healthier alternative to a food you probably love. Best of all you can switch this recipe up with as many flavors as you want, or keep them as basic as you want. We all know by now how much I love garlic and cheese, so of course I find these to be quite delicious. I have made several variations of this from salt only, to spicy, to making them with sweet potatoes (yum!). So have fun with this, and use the flavors you love! Enjoy.
Garlic Parmesan Fries (Print Me)
Ingredients:
4 tsp olive oil
Salt & Pepper to taste
3 pounds potatoes, washed and cut into 1/4-inch-thick strips
Cooking spray
2 Tbsp butter
5 tsp minced garlic
2 Tbsp fresh grated Parmesan cheese
2 Tbsp finely chopped fresh parsley (optional for garnish)
Directions:
Preheat your oven to 400°. Combine the oil, salt, pepper, and potatoes in a plastic bag or large bowl, tossing to coat. Arrange the potatoes in a single layer on a baking sheet coated with cooking spray. Bake the fries at 400° for 50 minutes, or until potatoes are tender and golden brown, turning a few times during cooking.
When the fries are almost done cooking, melt the butter in a skillet over low heat then add the garlic and saute until lightly browned (about 2 minutes), stirring constantly. Add the fries and parmesan cheese to the pan; tossing to coat. Garnish with parsley if desired and serve immediately.

Delicious! I do love a good potato wedge and baking them puts a nice healthy spin on them. 🙂
