This is a basic rice pilaf that combines orzo (rice shaped pasta) and rice. It’s simple to put together and it’s great for an easy side to any meal. As always, you can fluctuate the onion and garlic to suit your taste, but I don’t find that it has an over powering flavor of either. Enjoy.

Rice Pilaf

Ingredients:
2 tablespoons butter
1/2 cup orzo pasta
1/2 cup diced onion
2 cloves garlic, minced
1/2 cup uncooked white rice
2 cups chicken broth

Directions:
Melt the butter in a skillet over medium-low heat. Add orzo and cook, stirring frequently, until golden brown (about 3 minutes). Stir in the onion and cook until it becomes translucent; add garlic and cook for an additional minute. Stir in the rice and chicken broth, increase the heat to high and bring to a boil. Once boiling reduce the heat to medium-low; cover and simmer until the rice is tender and the liquid has been absorbed (about 20-25 minutes). Remove from heat and let stand for 5 minutes, then fluff with a fork.
