It’s probably no surprise by now that chocolate and peanut butter are two of my favorite things, especially when combined. Therefore, it’s not hard to believe that these cookies have become some of our favorites. They have just enough peanut butter to notice the flavor, but not so much that it overwhelms the whole cookie. They are also easy to make, which makes them perfect. Defiantly give these a try the next time you are in the mood for chocolate chip cookies, they are a welcomed change to the usual. Enjoy!
Peanut Butter Chocolate Chip Cookies
Ingredients:
1/2 cup butter, softened
1/2 cup peanut butter
1/2 cup sugar (or splenda)
1/2 cup brown sugar, firmly packed
1 egg
1 1/4 cups flour (as always, I use white wheat flour)
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup chocolate chips (I prefer semi-sweet)
Directions:
Preheat your oven to 375°. In a medium bowl cream together the butter, peanut butter and sugars until light. Add the egg to sugar mixture and and mix until fluffy. In another bowl whisk together the flour, baking powder, baking soda and salt. Mix the dry ingredients into the sugar mixture until just combined. Add the chocolate chips and combine. Lightly grease (or spray) baking sheets and drop the cookie dough by teaspoonfuls onto the baking sheets. Bake for 10-12 minutes or until slightly golden at the edges. Allow to cool on wire rack.
